All of my herbs are growing like crazy. I have given tons away to friends and I use them constantly, but when I have an abundance of herbs is the time I store up and make my compound butters. I always have unsalted butter on hand for baking. I take two to four sticks of butter at room temperature and finely chop an assortment of herbs, add finely chopped fresh garlic, rind of one lemon, add a little kosher or sea salt and some fresh ground black pepper. Mix together in the butter.
