Happy St. Patrick's Day Ya'll!

Happy St. Patrick's Day to everyone!  I hope you have a lucky day!

I'm preparing my usual today:  
 Corned Beef Brisket...
Rinse it off with cold water, including the spice packet...
Place it in a deep pot and add cold water, approximately 2" or so, don't drown it!  Open the spice packet and sprinkle in the Shamrock love!!
 Add about 1/2 teaspoon of Kosher Salt...
1/2 teaspoon coarsely ground fresh black pepper...
Put a lid on it, sorta cocked and turn heat to about medium.  Once it comes to a slight boil, turn the stove eye as low as it will go.  Secure the lid tightly and simmer it low and slow several hours.   

 My corned beef has slowly simmered almost all day.
Turn up the heat to medium and throw in  cubed potatoes.  I prefer to use red potatoes, leave the peeling on, just wash them really well.  If they are large, quarter them, small ones throw in whole.    Add a little kosher salt and ground black pepper.

Put the lid on and cook until the potatoes begin to get fork tender.  Then add your chopped cabbage.
Add kosher or sea salt and fresh cracked black pepper to taste...

Put the lid back on and simmer until the cabbage is tender and delicious.
Slice the corned beef and serve...  Yum.  It is really good.  

Great one pot dinner.  I'm having homemade yeast rolls and banana cream pie.  I know it's not green, but it was requested!

    Your corned beef brisket looks so delicious. You are always cooking something wonderful, ya know? My kids are a bit of Irish on their father's side, and I was married by a jolly Irish priest many years ago. Are you Irish, Ginger? Hope your week is happy.

  5. I haven't made corned beef in a long time! I like cooking mine in a crockpot. I love everything banana but I'm the only one around here who likes bananas! :/
