I'm Still Here! Update and a Recipe!

Well, it's been almost six weeks since  I sold and moved out of my house and started looking for a smaller home in order to down-size.  Much to my disappointment, I have not found anything available that I would even consider making an offer on...:( ***sad face***.   I am trying to keep a positive outlook, but I must admit that it's getting harder.  Seriously, there have been no new listings in my price range for two weeks!!  I just have to believe that a perfect home is out there for me, it's just a matter of when.  So, I'm asking everyone to please say a little prayer that I find a new home soon.  To make matters even worse is that I do not have Internet except on days that I work and some of those days I'm very busy and not a lot of Internet time.

On another note, I've been cooking and baking so I thought I'd share one of my favorite recipes with you.  I could be addicted to Wendy's breakfast bars.  Here is my version:

Super Fruity Breakfast Bars
1 cup butter at room temperature
1 cup granulated sugar
1 cup packed brown sugar
1 teaspoon sea or kosher salt
2 teaspoons cinnamon
2 eggs at room temperature
1 cup old fashion oats
1/2 cup flax seed meal
1/2 cup whole-wheat flour
1 cup all purpose flour

Mix butter, sugars and eggs until incorporated.  Slowly add all the dry ingredients until mixed well, but don't over beat.

Fold in:
1 cup dried cranberries
1 cup dried cherries
1 cup dried blueberries
1 cup chopped nuts (walnuts or pecans)

Pour in a 9 x 13 pan sprayed with a non-stick spray.  Sprinkle some oats on the top and bake in a 350 degree preheated oven.  Do Not Over Bake.  I start checking them after 15-20 minutes.  They will look wet when they are not and the center will be a bit doughy and dense.  Cool on a rack until pan is cool.  Turn out on a board and cut in squares and store in an airtight container or large storage bag.  They are oh so delicious, especially with a cup of coffee.

Variations:  Use your favorite dried fruits.  These are my favorites.  The original recipe used raisins, dried apricots and plums.  You can also bake them as cookies, I just like the bars better.
