On another note, I've been cooking and baking so I thought I'd share one of my favorite recipes with you. I could be addicted to Wendy's breakfast bars. Here is my version:
Super Fruity Breakfast Bars
1 cup butter at room temperature
1 cup granulated sugar
1 cup packed brown sugar
1 teaspoon sea or kosher salt
2 teaspoons cinnamon
2 eggs at room temperature
1 cup old fashion oats
1/2 cup flax seed meal
1/2 cup whole-wheat flour
1 cup all purpose flour
Mix butter, sugars and eggs until incorporated. Slowly add all the dry ingredients until mixed well, but don't over beat.
Fold in:
1 cup dried cranberries
1 cup dried cherries
1 cup dried blueberries
1 cup chopped nuts (walnuts or pecans)
Pour in a 9 x 13 pan sprayed with a non-stick spray. Sprinkle some oats on the top and bake in a 350 degree preheated oven. Do Not Over Bake. I start checking them after 15-20 minutes. They will look wet when they are not and the center will be a bit doughy and dense. Cool on a rack until pan is cool. Turn out on a board and cut in squares and store in an airtight container or large storage bag. They are oh so delicious, especially with a cup of coffee.
Variations: Use your favorite dried fruits. These are my favorites. The original recipe used raisins, dried apricots and plums. You can also bake them as cookies, I just like the bars better.

Sorry to hear about the house situation. It's hard to get the timing just right. We found a lot and a builder that will work for us, but the house is going to be ready a year before we are ready to move. We bought it any way, since that is the only place that looked perfect after 7 months of looking. But I guess it is better to have it too soon, than not soon enough. It's hard getting the timing just right, since we want our daughter to finish high school where she is. So we will have an extra house for awhile, and then we we go to sell the house we are in now, it may sell before she finishes school. Oh well, it will all work out. Hope you find something soon!

ReplyDeleteI know how hard this can be, Ginger. We sold our house, and moved to a smaller one to downsize. Now, we are wanting to move to the mountains and maybe build a house there. It's so unsettling at times like this, isn't it? But I know God will guide me to our next home, and I will say a prayer that He will guide you too, my dear friend.
