SMOTHERED PORK CHOPS!
Brown your chops in a little bit of olive oil.
Add a medium onion, sliced, green or red or a combination of pepper, sliced. I use red.
2 stalks of celery, diced.
Kosher Salt and Pepper to taste.
Add 4-5 Tablespoons of rice, your choice. I prefer brown since it's suppose to be better for us, just DO NOT use instant. Use real rice!
Pour a can of diced tomatoes over the top. (I prefer the fire roasted tomatoes with juice) They have so much more flavor. Add just enough water to rinse the can out. (just a couple of tablespoons)
Cover your skillet and let it simmer on low heat for about an hour.
At the very end add a small bag of frozen peas.
It is a one pot meal and it is so good and easy.
I serve it with a side tossed salad and a piece of crusty bread.Leftovers are excellent.
