Take a fresh bundle of asparagus and wash and dry on a clean towel or paper towels.
Break or cut off the bottoms of each spear. I like to break them because they seem to break just at the right spot.
Season with kosher or sea salt and fresh cracked black pepper to taste. I know, I like a lot of pepper!! Drizzle EVOO, extra virgin olive oil and with clean hands toss right on the pan to coat with the seasoning and oil.
Roast in a preheated oven at 375 degrees for about 15 -20 minutes depending on your taste. I love mine with a little crunch and very green.
